The Cellar Course
The Cellar Course is designed for Business Managers who appreciate the importance of serving the perfect pint.
It covers all areas of cellar management and cellarmanship, from the start of the brewing process ,the storage and conditioning of beers and the hygiene aspects of the cellar to the service of the pint from the bar.
There is also a look at what problems may arise and how to solve them.
On completion of the day candidates will have had practical experience in the cellar and passed a short exam for which they will have a certificate to display to all their customers |
The National Certificate for Personal Licence Holders
It is now a legal requirement that each and every sale of alcohol, made on premises licensed for the sale of alcohol, is either made or authorised by a personal licence holder. In order to obtain the personal licence, which can be used anywhere in England and Wales and lasts for ten years, a certificate of an accredited qualification is required, such as the certificate issued by the BIIAB if this exam is passed. This means the Government Dept of Culture Media and Sport and the Qualifications and Curriculum Authority have approved the course content.
Assessment is by a 40 minute,40 question multiple choice exam paper which is broken down into two sections. 8 of the first 8 questions must be answered correctly and 22 from 32 of the second part. Candidates must bring identification with them, as in the joining instructions, and a single photo, to be allowed to take this exam Candidates will also need a Criminal Record Bureau Certificate, two endorsed photos the application form and the criminal record declaration form and the fee, currently £37 ,to apply for their licence. |

Day Courses Available
These courses can be tailored to suit your individual requirements. We are often asked if the tutor will come out to train at your venue, which we are happy to do.(a one off charge will be made instead of individual delegate rates) We also run these courses twice a year at the Inntobookwork Centre itself. Attendance at a day course includes a light lunch. Charges per delegate per day are £65. Courses can be adapted to suit the particular vocation of candidates or to include company policies and procedures.
Time Management
In this course we look at how to prioritise work, delegation techniques and the ability to say no. We also look at the company structure and how workload is divided by the amount of responsibility carried by the task. We look at the programme of a normal week, isolate opportunities to combine tasks or delegate them and to prioritise workload. We look at diary planning in advance and how to convince others to work within our schedule. At the end of the course candidates will have an action plan detailing their priorities and ensuring that important matters are always completed in time.
Customer Loyalty and Service
This course is designed to improve customer service skills. Candidates walk through the business looking at it through the customers’ eyes and decide if they are maximising the enjoyment of the customer as well as their income from him. They take a look at their understanding of customer expectation and the competition and whether they can exceed customer expectation. The candidate is asked to review his operation and create an action plan to take back and implement in the workplace.
Interviewing Skills
This course teaches the candidate about person specifications, job descriptions, recruitment tools and interview techniques. It also covers some basic employment law in regard to recruitment , interviewing and selection of staff.
Appraisals and Assessments
Your staff are your most expensive asset. They often control how much money will come into your business and while most staff achieve very well it is easy to throw money away on keeping staff that do not achieve your standards. The candidates will learn how to communicate with their team about the standards expected from them and how well they are meeting those standards. They will be taught how to draw up performance improvement plans and how to motivate staff to achieve the required standards. Candidates will also be able to see how training plans can be used for individuals and the company to highlight training and development needs.
Developing Team Performance
This course looks at how a team works together,how they can be motivated and the leadership skills required to lead a team. Delegation is covered in some detail on this course, designed for licensees and business managers with a lot to achieve and little time to do it. This course will help to harness the team to pull forward at a speedier and more efficient pace.
Financial Management(2 day)
We teach you to manage your own vat returns and p.a.y.e scheme for your employees. Also we teach you to do your own stock takes, including price setting. We also teach you to keep your own books. This course will reduce your accountancy bills and give you better control of your business,as you will be able to see how the business is doing at any time.
Cutting the Cost of Growing Sales
This course looks at the whole business line by line and discusses ways of increasing sales and cutting costs. We look at increasing the number of customers, how often they visit and how much they spend. Then we look at margins, staffing costs and fuel, before progressing to promotional spends and other overhead costs. This course will give candidates a fresh look at their business, they will go away with many practical and innovative ideas.
BIIAB level 1 award in responsible alcohol retailing
Not everyone needs to hold a personal licence,which can be expensive in training costs .You may have supervisary staff that you authorise to sell alcohol on your behalf.If they do so in your absence and commit an offence,you are liable also, as you authorised them to sell alcohol. Your defence is due diligence,that is,you trained them to sell alcohol and in the licensing law and made sure that they understood.
This course teaches staff their responsibilities under the Licensing Act 2003 and a little about drinks service and customer care.There is a short exam to check knowledge and a Certificate is issued to those who pass the exam.
The Food Hygene Course
The Food Hygeine Course Coleg Ceredigion is accredited by the Chartered Institute of Environmental Health to deliver the foundation course Food Hygiene qualification. The provision of basic food hygiene training is a legal requirement for all those involved in the preperation and service of all food-including drinks! The certificate is valid for a period of three years,after which it will need renewing. The course is a half day course with a 60 minute ,30 question multiple choice examination paper. Candidates will have a Chartered Institute of Environmental Health –Foundation certificate in food hygiene to show their customers when they pass this exam.
